Recent T&M Customized Wedding Menu

We applied our culinary creativity to this sit-down dinner menu to reflect the bride and groom’s love of travel and multi-cultural backgrounds. Guests were greeted with our signature raspberry and cranberry ginger punch graced with a decorative ice ring. Our personable servers passed artistic hors d’oeuvres to the guests on beautiful platters which included:

  • Mousse de foie gras on a fennel spoon with a balsamic vinegar reduction
  • Oriental ‘gow gees’ with crab filling served with a smoky Vidalia onion sauce
  • Buffalo mozzarella marinated in basil pesto and wrapped in prosciutto
  • Spicy Thai beef lemongrass skewer with toasted sesame seeds

Soon guests were led to beautiful set tables to enjoy an amazing four-course celebration dinner with the following menu:

  • Oven roasted halibut teaser with a tamarind-carrot glaze served over a slightly heat-spiked coconut, chili pepper and mango risotto.
  • Lentil soup with buttered lobster ravioli topped with crème fraîche and caviar garnish
  • Cocoa & cinnamon dusted lamb cutlets served with a compote of raspberries, blackberries and hazelnuts
  • Glazed sugar snap peas with red & yellow bell peppers
  • Mousseline of roasted butternut squash and Yukon potatoes flavoured with candied garlic
  • Chocolate cappuccino mini-torte with crushed chocolate covered espresso beans
  • Cambazola blue cheese, fresh pear and mint truffle
  • Maple syrup crème brulée

Later in the evening, the wedding feast continued with an eye-catching late night dessert buffet displaying the following delectables prepared by our own pastry chefs:

  • Beautiful arrangement of seasonal and tropical cut fruit with silky butterscotch and passion fruit crème Anglaise dips
  • Alfonso’s Tiramisu in martini glasses
  • Our frangipani fruit flan with rich almond pastry filling
  • Rich white chocolate ganache & cranberry tart
