Moroccan Spiced Pistachios Recipe

Ingredients
- Yield: 1 ¼ cup; 6-8 servings
- 1 tbsp sugar
- 1 tsp granulated garlic
- ½ tsp coarse salt
- ¼ tsp turmeric
- ¼ tsp ground ginger
- ¼ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 cup shelled pistachios
- 1 ½ tsp vegetable oil
- 2 tbsp diced dried apricots
- 2 tbsp diced dates
- Preheat oven to 350F and place rack in centre of oven. Mix first seven ingredients in a medium-size bowl. Add pistachios and oil and toss until well coated. Spread nuts on a baking sheet and bake uncovered for about 5 minutes. Watch carefully to prevent burning. When cool, transfer to medium-size bowl and stir in dried fruit. Store in airtight container at room temperature. If serving more than a day later, store dried fruit separately and stir with nuts on the day of serving. Recipe doubles easily.
